Giveaway!!

It's about that time for another Giveaway!!  This time I have a real treat for you.  The prize is a free pass to our next cooking class!!!  We are doing some amazing dishes.  Lasagna, Macaroni and Cheese and Bagel Bite Pizzas.  The class costs $35.  If you win this giveaway, it's yours for FREE!!!

Box Tops Giveaway

I'm back! At least for a little bit. (4 weeks left before I have my baby!) My life has been crazy lately but it's been loads of fun!  My cooking/freezer meals classes have been such a huge hit lately!  It has been really fun for me to do those.  We did another burrito class this week and I actually remembered to have someone take pictures!  We have made over a thousand burritos the past 2 months!  Crazy huh?

Well to get things rolling again, I've got a cool little giveaway for ya.  This one comes through  My Blog Spark via Betty Crocker. The thing I like about this one is that it celebrates Box tops for education!

Last year box tops contributions earned more than $59 million dollars for Americas school.  And a pizza party for my little girls class!  (the school offered a pizza party to the class that brought in the most box tops!)

Pulled Pork and Giveaway Winner!!!

Before I announce the winner I want you all to read below...I know it's mean to keep you waiting but this is really important to me! 

My nephew is earning money to be able to go to a leadership scout camp next summer called Philmont.  It is an amazing camp and teaches so really neat and amazing things. 

His team (like a troop but for the varsity (teachers age) program) is selling 8-10 lbs pork butts. They will be cooked, smoked and ready to serve.  These guys can work miracles with a smoker! No lie, I've eaten some of their stuff!  It will include BBQ sauce.   It'll be sold whole (on the bone)  It will also be fall off the bone tender and will shred really easy.  Ready for some pulled pork BBQ sandwiches anyone? 

They will be $40 each and be ready by August 13.  All orders need to be in by August 6. That give you a little over a week.  Let me know if you are interested and I'll pass along the info to you.  Also if you are interested in splitting and order, let me know and I'll get that coordinated.  I'll even shred it for you and separate it into your portions. (if you are going to split it)  Thanks everyone!

Fun-da-Middles Review and Giveaway

I decided to join this group called My Blog Spark. They hook you up with trying new products, amongst other things.  They sent me a new product to try from Betty Crocker called Fun da-middles.  It's a cup cake with a creamy filling!  It's set to hit the shelves later this year!

They come in three different flavors.  Vanilla Cake with Chocolate Filling, Chocolate Cake with Vanilla Filling, and Vanilla Cake with Vanilla Filling.  

Also, They are going to give a free box to our lucky winner of this giveaway! Here is how you can enter.  Leave a comment letting me know about an upcoming event or gathering at which you would like to debut the new Betty Crocker Fun da-middles!  That's it, super easy. I'll randomly select a winner and your package will be mailed out in about a week.  The giveaway will last until Tuesday night!

Here is my review of the product. (the truth!)

I received the Vanilla cake with the vanilla filling to try. I actually really liked it.  I liked how easy it was to make.  It took about 5 minutes to whip up and then, fill the cup cake pans and bake. Super easy.  Its a fun twist to your normal cupcakes without the hastle of making them from scratch,  I give it a 10 for convenience!

Taste and texture... the center frosting was a little more "marshmellowie" than I expected. I think I would have liked it better with a little bit more creamy filling.   I really think I would like the other flavors better.  I like the idea of the chocolate filling with the vanilla cake. Chocolate just seems like it would be creamier to me.  But as for the taste... I liked it, I'd give it about an 8.

My husband liked them. He said "it's like making your own home made Twinky. Only better!"

You really don't need to frost them.  Just think of the frosting being on the inside.  But I frosted them anyway.  Who doesn't love frosting right? I'd say that I was actually pleasantly surprised with the product. I'm definitely going to be trying the other flavors.

Malibu Chicken and a Giveaway!

Here is another of my Mother-in-law's specialties. She is here visiting this week and we are really enjoying her company. She created this recipe for her kids when they were going to dances in High School. She  hosted the dinner and made this dish. 

The combination of the different flavors really compliments each other. I especially love the pineapple on top! That is my favorite part.  I have used chunk pineapple and just poured it all over the chicken. That works too.  When using the rings, it does help to separate the portions better.

It's my birthday this week!  To celebrate, we are doing another giveaway! For this one, you will receive $20 of your choice to the Baby B Boutique. Malibu Chicken

6 chicken breasts
6 slices of ham
6 slices provolone cheese
6 pineapple rings
1 jar of Teriyaki baste and glaze (I use Kikkoman)

Lay chicken breasts in an oven safe pan. Bake at 350 degrees for about 45 minutes or until cooked through.  Remove from oven (drain excess juices if desired) and layer the chicken with ham, cheese, and pineapple (you can secure it to the breast with a toothpick)Then drizzle with sauce.  Turn oven to a high broil.  Bake for about 5 minutes until cheese gets bubbly and golden. Serve immediately.


Grill it up!

We have really enjoyed grilling this recipe.  We like to slice the breasts in half (unless it's a really thin one).  Then with a kitchen mallet/tenderizer, pound the chicken down, to tenderize and flatten it a little bit.  Grill it on med high heat.  Since it's so thin, you will only need a few minutes on each side. You can also throw on the pineapple to grill for a few minutes at this time to bring out the flavors. When the chicken is just about done, add on the cheese, then ham, sauce, then grilled pineapple. (to the top)  Grill without flipping sides, just until cheese is melted and sauce starts to caramelize.  Remove from grill and enjoy!
