Malibu Chicken and a Giveaway!

Here is another of my Mother-in-law's specialties. She is here visiting this week and we are really enjoying her company. She created this recipe for her kids when they were going to dances in High School. She  hosted the dinner and made this dish. 

The combination of the different flavors really compliments each other. I especially love the pineapple on top! That is my favorite part.  I have used chunk pineapple and just poured it all over the chicken. That works too.  When using the rings, it does help to separate the portions better.

Malibu Chicken

6 chicken breasts
6 slices of ham
6 slices provolone cheese
6 pineapple rings
1 jar of Teriyaki baste and glaze (I use Kikkoman)

Lay chicken breasts in an oven safe pan. Bake at 350 degrees for about 45 minutes or until cooked through.  Remove from oven (drain excess juices if desired) and layer the chicken with ham, cheese, and pineapple (you can secure it to the breast with a toothpick)Then drizzle with sauce.  Turn oven to a high broil.  Bake for about 5 minutes until cheese gets bubbly and golden. Serve immediately.


Grill it up!

We have really enjoyed grilling this recipe.  We like to slice the breasts in half (unless it's a really thin one).  Then with a kitchen mallet/tenderizer, pound the chicken down, to tenderize and flatten it a little bit.  Grill it on med high heat.  Since it's so thin, you will only need a few minutes on each side. You can also throw on the pineapple to grill for a few minutes at this time to bring out the flavors. When the chicken is just about done, add on the cheese, then ham, sauce, then grilled pineapple. (to the top)  Grill without flipping sides, just until cheese is melted and sauce starts to caramelize.  Remove from grill and enjoy!

My son is 2 years old, so his "helping" skills are pretty limited. But my favorite thing to make WITH him in the kitchen is rice krispie treats. He loves to stir the pot, steal an ocassional marshmallow, and pour in the krispies. Plus, the whole process is quick enough that it keeps his attention, and we're able to munch on it pretty soon, so its almost like instant gratification. We also love using cookie cutters to get our treats into special shapes. The standard recipe almost makes a great base for building on. Some great add ins are peanut butter, baking chips of almost any flavor, left over cereals that need to get used up, and while I haven't tried it myself I would imagine you could even get away with dried fruits or chopped nuts, like you would in a granola bar. Cover anything in marshmallow goo and your kid is bound to eat it!

Oops. that is supposed to read that the standard recipe ALSO makes a great base. Not almost.

My favorite thing to make with my kids is chex puppy chow because it's their favorite. We also really love to make cake mix cookies.

My favorite thing to make with our kids is homemade bread. They love dumping the wheat into the grinder and all of the other ingredients into the mixer, just waiting to be doled out a piece of dough to munch on. I know, I don't get the love of eating dough either. The whole process makes me feel a little like the little red hen with my little chicks helping me!
